Trin 1: Forbered kyllingen
Start med at skære kyllingebrystene i halve på langs . Dette sikrer jævn tilberedning og hjælper med at opnå et mørt indre. Bank kyllingen let med en kødhammer, indtil den har en jævn tykkelse. Ensartet tykkelse gør det muligt for kyllingen at blive tilberedt jævnt, hvilket forhindrer tørre kanter eller utilstrækkelig tilberedning i midten.
Trin 2: Bland æg- og parmesanblandingerne
I en mellemstor skål piskes ingredienserne til æggeblandingen sammen : æg, hvidløg, italiensk krydderiblanding, salt og peber. I en separat skål blandes parmesanost og mel for at lave paneringsblandingen.
Dyp hvert kyllingebryst i æggeblandingen, sørg for at det er helt dækket, og vend det derefter i parmesanblandingen. Ryst overskydende panering af for at undgå klumper, der kan brænde på under stegningen.
Trin 3: Tilbered kyllingen
Heat enough olive oil in a large non-stick skillet to cover the bottom. Once hot, add the chicken breasts. Cook 4-5 minutes per side until the crust is golden brown, crispy, and the internal temperature reaches 165˚F (74°C) on an instant-read thermometer.
Tip: If the chicken browns too quickly, reduce the heat slightly to prevent burning while keeping the inside juicy.
Step 4: Make the Lemon Butter Sauce
While the chicken cooks, prepare the sauce in a separate saucepan. Melt the butter over medium heat, then add the minced garlic and cook until fragrant. Stir in the chicken broth, lemon juice, and black pepper. Allow the sauce to simmer for about 2 minutes, letting the flavors meld together into a bright, buttery glaze.
Step 5: Combine and Serve
Once the chicken is cooked, pour the lemon butter sauce over the breasts, ensuring they are fully coated. Garnish with lemon slices and finely chopped parsley for a fresh, colorful presentation. Serve immediately with your choice of sides such as roasted vegetables, mashed potatoes, or a fresh green salad.
