Tater Tot Breakfast Casserole

 

Ingredients

  • 1 lb (450 g) breakfast sausage, bacon, or ham, diced
  • 1 small onion, diced (optional)
  • 1 bell pepper, diced (optional)
  • 6 large eggs
  • 1 cup (240 ml) milk
  • 1/2 tsp kosher salt + 1/4 tsp black pepper
  • 1/2 tsp garlic powder, optional
  • 3 cups shredded cheese (cheddar, mozzarella, pepper jack), divided
  • 32 oz (900 g) frozen tater tots
  • 2 cups optional veg: spinach, mushrooms, etc.
  • Chopped chives or green onions, for garnish
  • Nonstick spray, for the dish

 

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook sausage (or bacon/ham) in a skillet over medium heat until browned; drain. If using onion/pepper/mushrooms, sauté until tender.
  3. Whisk eggs, milk, salt, pepper, and garlic powder. Fold in 2 cups cheese and any delicate greens.
  4. Layer the cooked protein and sautéed vegetables in the dish. Pour the egg mixture over the top.
  5. Arrange tater tots in a single layer. Sprinkle remaining 1 cup cheese over the tots.
  6. Bake 35–40 minutes until eggs are set and the tots are deeply golden. Rest 5–10 minutes. Garnish and serve.

Troubleshooting & Tips

  • Soggy tots? Keep them in a single layer and bake on the center rack. For extra crunch, pre-bake tots on a sheet for 10 minutes.
  • Eggs not set? Tent with foil and bake 5–10 minutes longer until the center barely jiggles.
  • Make-ahead: Assemble (without tots) and refrigerate up to 12 hours. Add tots and cheese just before baking.
  • Flavor boosts: Add 1 tsp smoked paprika or a few dashes of hot sauce to the eggs; swap part of cheddar for pepper jack.
