Troubleshooting & Tips
- Soggy tots? Keep them in a single layer and bake on the center rack. For extra crunch, pre-bake tots on a sheet for 10 minutes.
- Eggs not set? Tent with foil and bake 5–10 minutes longer until the center barely jiggles.
- Make-ahead: Assemble (without tots) and refrigerate up to 12 hours. Add tots and cheese just before baking.
- Flavor boosts: Add 1 tsp smoked paprika or a few dashes of hot sauce to the eggs; swap part of cheddar for pepper jack.
